100% Cabernet Sauvignon
The Cabernet was picked by hand in late September. The grapes were destemmed and 50% crushed. They went into a closed top tank for a 4 day cold soak and twice daily pumpovers before inoculation and fermentation. Post-fermentation, the wine went into used French Oak barrels, where it was racked twice before going to keg 10 months later.
The aroma on this wine starts out with rich notes of tobacco and leather, but also carries a delicate dark fruit element in it. On the palate, silky fruit and tannins abound. The finish lingers on for a long time, with delicate and chalky tannins and a hint of acidity to balance it all out.
